Hi, I’m Courtney UnCooked, and I live in Virginia Beach, VA, with my best friend Stephen and two rescue dogs, Roxy and Cupid. I run a real estate team, affectionately referred to as The Z Team, and also a kayaking company for the six warmer months of each year. I host a free paddle board meetup each week in the summer and find that this meetup is definitely the highlight of my week! I grew up in Poquoson, Virginia, but after getting in non stop trouble with my partner in crime Page Bishop, my mom thought it would be best if I moved to my dad’s house in Georgia in the 9th grade, where I went to both Deerfield Windsor and Westover High Schools and graduated from Westover in 1997. I attended The University of Georgia where I miraculously obtained two bachelor's degrees: one in speech communication and one in Broadcast News. Throughout the years, I have been a news reporter, radio DJ and I even owned my own advertising agency. I started and ran a large networking group, called The Future Billionaires Club, for over ten years. We collected over 143,000 items and 130,000 dollars for different charities, all the while making friends AND getting more business! My favorite charity is “Stand Up for Kids” which helps homeless teens. I believe all of these ventures have helped me to become “Courtney UnCooked” fairly easily and the reason I am never shy in front of a camera or crowd. I have been vegan since 2014, and although I went Vegan for the animals, I find that the many health and environmental benefits of being a Vegan make it very easy to stay one. I am an alcoholic who quit drinking on November 20, 2016, and a cigarette addict who quit smoking for good in 2019 after reading Allen Carr’s book; The Easy Way to Quit Smoking. I am always trying to better myself and those around me by constantly striving to be the best version of myself: I do this one day at a time. In 2019, my life was changed forever when I attended The Woodstock Fruit Festival in upstate New York. At this festival, only raw food, mainly fruit, was served for an entire week! To my surprise, by day three, I felt like a completely new person! Lighter and definitely with some major pep in my step! Free at last, free at last, God almighty I was free at last! I had discovered the true way our bodies were supposed to eat! Hopefully, this isn’t too personal, but I was shocked that my bowel movements had absolutely ZERO smell and that I was having one shortly after each meal. I had never felt or slept better, and that week was one of the best weeks of my entire life! I came alone and with zero expectations, but by the end of the week, I was literally a new person with a hundred and fifty new friends! I even performed and did a stand up comedy routine in the talent show at the end of the week! I had never done standup in my life, but I was feeling so good from eating all that raw food that I felt I could do anything! People thought that in real life I was a comedian, and they asked me where I performed. Nobody believed me when I told them that I had never done that in my life! THAT is the power of eating raw food the way nature intended you to! Eating raw will change your life and show you sides of yourself you never even knew existed! On the long drive home from the festival, a series of thoughts hit me all at once like a bolt of lightning...I had heard of others having these amazing “Ah ha moments” but never had one myself! In one flash, I heard the holy spirit tell me: “You are now Courtney UnCooked. You’re going to go to school and become a raw Vegan chef and have a show where you teach one new raw Vegan recipe each week. You will have a different guest chef each week, and at the end of each episode, you will do a freestyle rap about each recipe!” I also had a vision of a theme song, like all great television shows have, and so I whipped out my phone at the first stoplight I came to and recorded the rap that is in my intro video today! I even visualized making the theme song video in a grocery store with dancing veggies etc.! I’m telling you the whole concept was beamed into my mind in one single flash that would change my world forever! As soon as I got home, I hired my very talented friend David Bradshaw to help me record the song with various different instruments and vocalists. We recorded it in the same place we had made many jingles before with the infamous Lance Koehler of the Dirty Dozen Brass Band. Lance’s studio in Richmond, Virginia, is called Minimum Wage Recording, and in my opinion, there is no better place on earth to record a song. Now that I had a sweet intro/theme song, I needed someone to make the intro video and of course, the episode each week. So I called my dear friend Rebekah Morillo, who takes all of my real estate photos and asked if she and her husband Carlos would be interested in taking on this project. Carlos is a very talented videographer and editor at a prominent advertising agency and so I knew they would be the perfect couple for the job! They quickly accepted and so my next phone calls were to some of my best girlfriends to see if they would be dancing vegetables for me inside the iconic Heritage grocery store. And as they say...the rest was history! What’s so crazy about all of this is that I hated cooking and had almost NEVER cooked in my life! The kitchen was the last place you would ever find me. Turns out the reason I hated cooking was probably because we are NOT supposed to cook our food! Cooking food over 118 degrees kills most of the vitamins and minerals. So even if you are eating cooked broccoli, it’s not that healthy for you because all the good stuff has been cooked out of it! My instincts were right all along! Cooking sucks! I started researching raw Vegan chef schools online and the absolute best one I could find was called The Pure Joy Academy. Because the school was in Arizona, I decided to take their online program led by Elaina Love and Katelyn Louise. I highly recommend this school and am thoroughly impressed with their operation. In 2020 I started a raw vegan UNcooking show where each week I had a new guest, a new raw vegan recipe and at the end of the show I would do a freestyle rap about the recipe we had just made. Sometimes at the end of the show I also had my guests perform if they were musically talented or in bands etc. So my cook cook will include the 52 recipes from 2020 and then in 2021 I decided to do only one episode a month so the book will also include the first 9 months for a total of 61 recipes. My episodes are only ten minutes long and they are actually like a little variety show. I always wear a solid gold hat and try to have solid gold recipes and musical guests! I am usually very creative but when it comes to what I want on a cover or even what I really want for the title my mind is totally blank :(. Help!!
