I'm opening a Mecca of sorts, for wine, beer, spirits, and cocktail education. We will be in the center of Philadelphia, with classes for the general public, online classes, training for professional bartenders, etc.
Everything is designed with integrity, freedom, fun, and elegance in mind. Our new textbook was designed by a GQ editor, and we want a look for our logo that is professional, fun, and approachable.
The winner of this contest will also get considerable exposure as they will be credited in our course materials, website, and the logo will be visible in center city Philadelphia.

EDIT: Attached a few files to show what I want a bit better. I trust your creativity. At a general level, I really like the design of the Black Ivy League Productions logo, but I also want our logo on the side of our name like in the University of Pennsylvania example.
At the basic design level: I do not want the focus to be on cocktails/alcohol in the logo and I'm not looking for a really catchy logo either. I'd prefer a more subtle and elegant connection like in the uploaded University logos.
Edit 2: Removed the Black Ivy League Productions logo. We liked it on a general design level, but it's too gimmicky to be used for the school. I think some designers are getting confused and think we just want a coat of arms because other educational institutes use it. That's not the case at all.
What we really desire is a logo that tells a story of high-end beer/wine/cocktail training and when people are asked about the logo they can also communicate a story of the school. (i.e. if people ask harvard what veritas means, they can say truth. If people ask Yale what orim ve tumim is they can say light and innocence etc.)
